These cheesy meatballs please everyone. The buttery fresh tomato sauce is delicious and simple to make so that there is no need to use ready-to-use ones. Dip the meatballs in the sauce for a great snack! Made with our Truly Grass Fed Ghee Butter, these flavors will be mouth watering.




  • 1 cup fresh breadcrumbs
  • ¼ cup milk
  • 1 lb/453g prime ground beef
  • 2 tbsp flat-leaf parsley, finely chopped
  • ½ cup sharp cheddar cheese, grated
  • 1 small onion, finely diced
  • 1 garlic clove, finely minced
  • 1 egg yolk
  • 6 tbsp ghee
  • salt and black pepper

fresh tomato sauce

  • 1 ½ lb fully ripe tomatoes, unpeeled and seeded
  • 3 tbsp ghee
  • 1 onion, thinly sliced
  • 1 small garlic clove, minced
  • 1 bay leaf
  • 2 basil sprigs
  • salt and black pepper


  1. For the meatballs, combine in a small bowl the breadcrumbs and milk and let soak for 5 minutes. Meanwhile, place meat, parsley, cheese, onion, garlic, egg yolk, 2 tbsp of ghee, salt, and pepper in a large bowl. Stir in the soaked breadcrumbs mixture and mix just to combine, since the less you mix it, the softer they will be.
  2. Grease a large baking tray with 2 tbsp of ghee. 
  3. Shape around 36 small balls of about 1” (2,5 cm) and transfer to the baking tray. Melt the remaining ghee and brush the meatballs. Cover with plastic film and refrigerate for about 30 minutes (or up to 1 day).
  4. For the fresh tomato sauce, finely dice the tomatoes and set them aside. Heat the ghee in a medium-sized saucepan, add onions and let them brown slightly. Add garlic, wait until fragrant and stir in the tomatoes, bay leaf, basil sprigs, salt, and pepper. Cook over low heat until tomatoes are meltingly tender and fragrant. Season again, correct acidity by adding a pinch of sugar, and set aside. Reheat before serving.
  5. Heat the oven to 350Fº/180ºC (medium) for 10 minutes. Pop the meatballs into the oven and bake them for about 35 minutes until golden brown and crispy on all sides. 
  6. Serve meatballs with tomato sauce aside.
