Corn Salad with Aged Cheddar


Ingredients

Scale
  • 3 ears of corn
  • 2 roma tomatoes, diced
  • 1 avocado, peeled and cubed
  • ½ red onion, diced
  • juice of 1 lime
  • 1 tsp salt
  • ½ cup Truly Grass Fed Aged Cheddar Cheese

Instructions

  1. Shuck corn and boil in water for 10 minutes
  2. Drain and cool
  3. Slice corn from the cob and place in a bowl
  4. Toss with tomatoes, onions and avocado
  5. Drizzle with lime juice and salt
  6. Toss with cheese and enjoy
