Cheesy Spaghetti Squash Noodles


  • 1 spaghetti squash
  • 1 tbsp olive oil
  • 1 tsp salt 1 tsp pepper
  • ½ cup spinach, chopped
  • 1 ½ cups Truly Grass Fed Sharp Cheddar Cheese, Shredded
  • 1 tsp Italian seasoning


  1. Preheat oven to 400F.
  2. Cut squash lengthwise and remove the seeds from the center.
  3. Drizzle with olive oil and sprinkle inside with salt and pepper.
  4. Prick with a fork on the outside of the squash multiple times.
  5. Place face down onto a baking sheet and bake for 30 minutes or until the inside is soft.
  6. Remove from oven and let cool slightly.
  7. Using a fork make “noodles” by scraping away the sides. Loosen the noodles into the center of the squash.
  8. Sprinkle with spinach, cheese and Italian seasoning.
  9. Place back in oven and cook until cheese is browned and bubbling.
  10. Enjoy!
