Blueberry Crumble Bars



  • 1 ½ cups all-purpose flour
  • ¼ cup sugar
  • ¼ cup brown sugar
  • ½ tsp baking powder
  • 1 pinch salt
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup Truly Grass Fed Unsalted Butter, cold and cut into cubes


  • ½ tbsp cornstarch
  • ¼ cup sugar
  • 1 tbsp lemon juice
  • 2 cups fresh blueberries


  1. Line an 8X8 baking dish with parchment paper.
  2. Preheat oven to 375F.
  3. In a mixing bowl, whisk flour, sugar, brown sugar, baking powder and salt.
  4. In a small mixing bowl, whisk egg and vanilla. Add egg mixture and butter to flour mixture and use a form to make it crumbly and combined. Press half the mixture into the pan in an even layer.
  5. In a separate bowl, combine blueberries with sugar, lemon juice and cornstarch. Toss. Pour blueberries over crust. Then crumble the rest on top.
  6. Bake for 35 minutes or until top is golden brown. Let cool then cut into squares.
